Abstract

Mediteranska prehrana bogata maslinovim uljem koje je glavni izvor masti sinonim je zdravog načina prehrane. Optimalan omjer nezasićenih i zasićenih masnih keslina te antioksidativna aktivnost polifenola, tokoferola, karotenoida i klorofila osiguravaju pozitivan učinak maslinovog ulja na ljudsko zdravlje. Polifenoli kao i druge fitokemikalije pokazuju veću učinkovitost ako se unose u urganizam putem prirodnih izvora. Maslinovo je ulje dobar izvor polifenolnih sastavnica, kojima se pripisuje važna uloga u preventivnom i terapijskom djelovanju ove namirnice. Iz navedenog razloga cilj ovog diplomskog rada bio je procijeniti kvalitetu hrvatskih maslinovih ulja obzirom na sadržaj polifenola te odrediti antioksidativnu aktivnost istih. Sadržaj ukupnih polifenola u analiziranim maslinovim uljima određen je spektrofotometrijskom metodom korištenjem Folin-Ciocalteu reagensa, dok je antioksidativna aktivnost procijenjena DPPH testom. Rezultati istraživanja upućuju na iznimnu kvalitetu hrvatskih maslinovih ulja te se analizirana maslinova ulja mogu smatrati dobrim izvorom polifenolnih sastavnica. Antioksidativna aktivnost ispitivanih maslinovih ulja proporcionalna je izmjerenom sadržaju ovih biološki aktivnih sastavnica.

Abstract (english)

The Mediterranean diet rich in olive oil, which is the main source of fat, is a synonym for a healthy diet. The optimal ratio of unsaturated and saturated fatty acids and the antioxidant activity of polyphenols, tocopherols, carotenoids and chlorophylls ensure the beneficial effect of olive oil on human health. Polyphenols as well as other phytochemicals show higher efficacy when taken into the organism through natural sources. Olive oil is a good source of polyphenolic components, which take an important role in the preventive and therapeutic function of this food. The aim of this diploma thesis is to evaluate the quality of Croatian olive oils regarding the proportion of polyphenol and to determine their antioxidant activity. The total content of polyphenols in the analyzed olive oils was determined by spectrophotometric method using Folin-Ciocalteu reagent, while the antioxidant activity was estimated by the DPPH test. The results of the research point to the exceptional quality of Croatian olive oils and that the analyzed olive oils can be considered as a good source of polyphenolic components while the antioxidant activity of the examined olive oils complies with the content of these biologically active constituents.
